Growing Flavor the Green Way

Our commitment to sustainability begins with the ingredients themselves. Rather than relying solely on imported produce, we grow our own basil and herbs for our cocktail menu right here at Ratafia. This not only guarantees exceptional freshness and flavor in every drink we serve but also drastically reduces our carbon footprint, particularly when located in St. Maarten which is dependent on imported herbs as the island produces very little in terms of agriculture.
By cultivating our own ingredients, we cut down on transportation emissions and packaging waste, all while giving our bartenders access to the freshest, most aromatic garnishes imaginable. When you taste a sprig of basil in your cocktail, you’re tasting the care and craftsmanship that started just steps away from the bar.
Breathing New Life into the Old
When it came time to design Ratafia’s interior, we made a conscious decision to forgo the mass-produced and the modern in favor of something more meaningful. Instead of purchasing new décor, we scoured antique markets and collectors’ corners to curate a selection of vintage and reclaimed pieces that tell a story.
From French vintage ashtrays that whisper tales of café culture to antique tribal masks from Africa that celebrate artistry and heritage, every piece inside Ratafia has a soul. These items do more than decorate our walls—they reduce waste by giving existing materials a second life and provide our guests with an atmosphere steeped in character and authenticity.
Waste Not, Want Not
In our bar program, creativity and sustainability go hand in hand. One of the most effective ways we reduce waste is by ensuring that nothing of value goes unused. The rinds of citrus fruits—so often discarded in other bars—find new purpose in our kitchen and bar. We use them for infusions, syrups, and garnishes, capturing every drop of flavor while minimizing what ends up in the bin.
This philosophy extends throughout our operations. Every ingredient and material is evaluated not only for quality but also for longevity and environmental impact. By reimagining waste as an opportunity for innovation, we’ve cultivated a culture where sustainability inspires creativity rather than constrains it.
Light, Naturally
Even the ambiance at Ratafia reflects our eco-conscious approach. We harness the natural light and colors of the St. Maarten sunset to light the bar during the daytime and sunset hours. The soft, inviting glow that illuminates your evening is powered primarily by L.E.D. lighting—an energy-efficient choice that consumes significantly less electricity than traditional bulbs. Beyond lowering our energy use, this choice contributes to the intimate, modern-yet-timeless aesthetic that defines Ratafia’s atmosphere.
Built with a Conscience
Sustainability was not an afterthought in Ratafia’s creation—it was a foundation. The bar itself was built primarily from sustainable materials such as bamboo and responsibly sourced wood. Bamboo, one of the fastest-growing plants on Earth, offers strength and beauty without depleting forests. Combined with reclaimed and natural materials, these design choices embody our belief that luxury and responsibility can coexist beautifully.
